Fresh Peach and Mint Cottage Cheese Salad

Ingredients

chopped fresh mint leaves

cucumber, thinly sliced
|
|
|

large or 2 small thinly sliced fresh peaches
|
|
|
|
|
Garnish with mint leaves
|

crunchy pita chips
|
|
|
Directions:
Add chopped mint to cottage cheese and stir to blend.
Arrange cucumber slices and peaches on two salad plates and top with 1/2 cup cottage cheese.
Garnish with fresh mint leaves and serve with crunchy pita chips.
